Exteriors of the castle are Dromoland Castle in Clare, Ireland. Like in the movie, it is also a hotel, in fact a resort.
The first scene shown of Ireland after the girls fly over is of Kinvara in County Galway. Dunguaire Castle is in the foreground, which is just outside Kinvara village.
When scenes of the castle shown from the outside, the decorations on the castle are CGI photoshopped in. The wreaths and Christmas lights shown are not really there.
