For the set they built an entire Airbus A330 to 1:1 scale including a functioning cockpit.
While since 9/11 cockpit doors and locks have been strengthened, it is a misconception that pilots cannot open cockpit door during flight. They can and do. Pilots and flight deck crew are allowed to step outside to use the restroom, let flight attendants bring in food, or switch crews for rest purposes and do so on almost all flights. Less commonly they also open door to look for any malfunction on wing control surfaces or avionics or flight control access points that are not all in cockpit.
Pilots have emergency codes which can be transmitted to ground control if there is a hijacking. Additionally, they are able to cut the oxygen to the passenger cabin which would render all passengers and terrorists unconscious until the attackers are disabled.
The producers painted a real Airbus A330-300 formerly of Qatar Airways into Kingdom Airlines livery for use in some scenes.
The series is told in real-time, with each of the seven episodes corresponding to one hour of the hijacked flight.
The airplane set was a complex construction, built as a 146-foot-long platform that could be taken apart to accommodate filming.
The cockpit's avionics were connected to a real flight simulator to enhance the authenticity of the flying sequences.
Idris Elba serves as both the lead actor and an executive producer on the series.
